Turkey Taco Loaded Zucchini
Serves Four
INGREDIENTS
1 tablespoon coconut oil
4 large zucchini, sliced in half lengthwise
1 lb ground turkey
½ cup crumbled goat cheese
½ cup crumbled feta cheese
1 small red onion, minced
1 red bell pepper, minced
1 bunch cilantro, minced
1 tablespoon taco seasoning (salt free)
Sea salt, to taste
1 15-oz BPA free can tomato sauce (no sugar added)
2 large avocados, chopped
1 large lime, sliced into 8 wedges
DIRECTIONS
Heat oven to 400 F. Grease a large glass baking dish with coconut oil. Scoop and discard the seeds from the zucchini halves, then place them cavity-sides up in the baking dish. Set aside.
Add turkey, goat cheese, feta, onion, bell pepper, dry seasonings, and tomato sauce to a medium mixing bowl. Stir well to combine, then stuff the zucchini cavities with the mixture.
Bake for 30 minutes or until zucchinis are tender and the filling is golden brown on top. Serve zucchini topped with avocado slices and serve lime wedges on the side.
